Creamy Vegan Sweet Potato Bites

Why use regular black pepper on creamy vegan sweet potato bites when you can use Black Pepper essential oil? It is a powerful antioxidant and aids digestion. Additionally, because it’s antibacterial, you can power up your health while enjoying the decadent snack. Mixed with healthy fresh veggies, as well as detoxifying lemon and lime, this vegan party snack will make guests forget their manners.

Ingredients

Yield: 2 servings

3 tablespoons olive oil, plus more for greasing the pans

1 drop Black Pepper essential oil

2 sweet potatoes, peeled

½ teaspoon Celtic sea salt

2 ripe avocados, mashed

1 drop Lime oil

2 drops Lemon oil

1 tablespoon fresh lime juice

1 clove garlic, minced

¼ teaspoon chili powder

¼ teaspoon paprika

2 tablespoons chopped fresh cilantro (optional)

2 diced roma tomatoes, seeded (optional)

Salt and pepper to taste

Cooking Instructions

Preheat oven to 425°F.

Line two baking sheets with foil and grease with olive oil. Blend Black Pepper oil and olive oil to taste. Slice sweet potatoes thinly, and place in a single layer on baking sheets.

Coat sweet potatoes with the mixture of olive oil and Black Pepper oil and add sea salt. Cook 20 minutes or until golden. Turn slices over and cook for 10–12 minutes more.

Remove from oven and cool. While cooling, combine avocados, essential oils, lime juice, garlic, and spices. Add avocado mixture to sweet potato slices and garnish with cilantro and tomatoes (if desired). Add salt and pepper to taste.
